Not sure if you're still in the market for tutorials, but for dark mode, I recommend using light-dark CSS. That way you can have more control over both modes in case there are any aspects you want to be more colorful than the browser default. For an example in use, see the source code for Bibliodex.
Interesting to see that AO3-style page template you linked. I've drafted up something like that myself, but I think I'll save the link to this one so I can add it to my Useful Links page the next time I do an update.
